Forty years ago, the French pork industry carried out a foresight study. Where does it stand today? What factors will determine its future? What scenarios can we envisage? Using a foresight method based on the representations of industry players, we attempt to anticipate potential developments in the French pork industry, and present various scenarios.

“La joie de manger”, written by a recognized specialist in nutrition and member of the French Academy of Agriculture, places the act of eating in its globality with its three equally important functions: to nourish, to delight and to bring people together. He recalls the cultural dimension of our food. It shows how the food offer in our country is qualitatively and quantitatively remarkable and does not poison us, even if progress can and must still be made. The question of animalism and anti-speciesism, which are opposed from an anthropological point of view to the place of man, is largely developed from a moral and ethical angle. A spiritual approach to our diet gives this book an additional originality. Gratitude, respect, sharing, sobriety are values that can guide us far from dogmatic nutritional and ecological discourses. Thus, a peaceful relationship with our food and with others can be born. This book contrasts with many anxiety-provoking or moralistic books on food. Through five chapters, it addresses five facets of the place of food in human life.

The dromedary, also called one-humped camel or Arabian camel (Camelus dromedarius), has a particular feeding behavior. Indeed, its digestive physiology is entirely oriented towards the valorization of fodder with low nutritional value. The dromedary is a polygastric animal, but it is often qualified as "pseudo-ruminant". The meat of the latter is an ethnic food consumed in the arid regions of the Middle East and North Africa. Given its popularity for its medicinal and nutritional reputation, camel meat could be an excellent option for a sustainable global supply of red meat.

While the anatomical and physiological characteristics of the large camelids (dromedaries and Bactrian camels) have been widely commented by researchers, the modalities of its rearing (reproduction, lactation, feeding, fattening, sanitary and technico-economic management) in a context of "zootechnical modernization" are more rarely exposed. The present book attempts to provide a practical synthesis for all the new actors of this emerging sector.

With a strong growth in production and export over the last 20 years, Brazil continues to consolidate and strengthen its position in international beef markets. This article summarizes Brazil’s improvements and developments in this sector, tracing the evolution of the Brazilian beef market from 2000 to 2021, paying attention to quality indicators and changing consumer expectations. In addition, this article presents the challenges and prospects for the Brazilian beef sector and highlights including the positive economic, social, and technological developments resulting from the implementation of the Meat Standards Australia (MSA) grading scheme. Projections for the Brazilian and world beef market are based on Brazilian and international research reports. Although facing difficulties due to the economic and sanitary crisis, the forecasts for the Brazilian and international markets are promising. This is an opportunity for the Brazilian beef sector to demonstrate in a transparent way the reliability of its production processes, both at the farm level and at the processing level by meat companies.

The book "The beef supply chain in Algeria" published by the publisher “L'Harmattan” describes the cattle farming systems, processing and distribution of beef in Algeria. It is organised in seven chapters related to the characteristics of the sector, imports of cattle and beef, producers and collectors of beef cattle, distributors, structures of consolidation and processing, weaknesses in the competitiveness of the sector and the perception of beef by the Algerian consumer.

Le gout et les bénéfices de la viande

Une fois encore, les chiffres démentent les impressions. Tandis que l’air du temps porte à croire à une désaffection des consommateurs pour les produits carnés, les statistiques montrent le contraire. Selon les dernières données de FranceAgriMer et d'Agreste publiées dans une synthèse de conjoncture parue en juillet, les Français ont consommé en 2025, pour la deuxième année consécutive, davantage de viande, avec une hausse globale de 1,3 % en 2025, après une progression de 2,3 % en 2024. À 85,7 kilos équivalent-carcasse (kgec) par habitant, le niveau de consommation retrouve son étiage de 2016, s'éloignant du point bas de 2023 marqué par une inflation galopante. Les grandes tendances de ces dernières années se confirment. La consommation de viande bovine diminue de nouveau (- 3%) à 20,1 kgec par habitant, tout comme le mouton et l'agneau (- 5,9 %) à 2 kgec, tandis que la volaille poursuit sa croissance (+3,3 %) pour atteindre 31,7 kgec par habitant. La viande porcine a connu dans le même temps une embellie (+2,7 %) à 31,5 kgec.
Ces évolutions constitueraient une bonne nouvelle pour les filières françaises si elles ne profitaient essentiellement aux origines étrangères. Selon la même étude, les importations de viande ont progressé sur la même période de 5%, la palme revenant à la viande de volaille (+ 8,6 %), devant les importations de viande porcine (+ 3,9 %). La part des importations a dépassé les 50% pour la viande de poulet ! Dans le même temps, la viande bovine a jugulé cette tendance, les importations ayant connu une baisse de - 0,8 % en 2025 après - 0,3 % en 2024 et - 5,7 % en 2023. La part des produits exportés progresse cependant légèrement, à 26%.
Toujours est-il que les Français, en dépit de différentes injonctions, apprécient plus que jamais d’équilibrer leur alimentation avec la viande. Ses bénéfices nutritionnels, souvent questionnés, sont de mieux en mieux connus, comme en témoignent plusieurs articles que nous vous proposons dans cette édition de Viandes&Produits Carnés. Deux contributions "Modélisation de l’effet matrice de la viande" et "Effet matrice de la viande : déterminants et implications nutritionnelles" par des équipes de l’Unité Qualité des Produits Animaux d’INRAE et de l’Université Clermont Auvergne permettent de mieux comprendre l’effet matrice dans la biodisponibilité des nutriments de la viande. Un autre article ("Biodisponibilité des vitamines et de la choline dans les produits animaux") éclaire la manière dont les produits animaux sont des vecteurs de vitamines et de choline biodisponibles trop longtemps négligés. Des domaines où les champs d’investigation sont encore importants.
Également à lire dans cette édition, une présentation des enjeux et projets de l’UMT Imerviande qui entend accompagner les transitions technologiques, humaines et numériques des filières viandes françaises et une étude sur le rôle de l’élevage ovin dans les régions steppiques algériennes.
